- 6 cups mixed greens such as arugula, spinach, and kale
- 1 cup pomegranate arils seeds
- 1 medium pear thinly sliced
- ½ cup crumbled goat cheese or feta cheese
- ½ cup toasted walnuts or pecans
- ¼ cup thinly sliced red onion optional
- 3 tablespoons olive oil
- 2 tablespoons pomegranate juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or maple syrup adjust for sweetness
- Salt and freshly ground black pepper to taste
